Seed Cycle Granola

I started making my own granola since store bought ones are filled with sugar and inflammatory oils. When I realized how easy it was to customize, that's how my Seed Cycle Granola was created.
Dairy free, gluten free, refined sugar free and only a few simple ingredients. It's seriously addicting, once I start eating I literally can't stop.
Perfect as a yogurt bowl or smoothie bowl topping, with some milk of choice or just straight out the jar.

For the Menstrual & Follicular Phase I use cacao powder and pumpkin seeds. The cacao provides a boost of iron to replenish lost stores on your bleed. Pumpkin seeds are high in zinc which supports a healthy uterine lining.
For the Ovulation & Luteal Phase, I switch out the cacao for cinnamon and the pumpkin seeds for sunflower seeds. Cinnamon helps keep blood sugar stable which is especially helpful in the luteal phase when cravings and mood swings are more likely. The sunflower seeds are packed with Vitamin E which helps boost progesterone and lower inflammation.
MENSTRUAL & FOLLICULAR PHASE VERSION
INGREDIENTS
2 cups gluten free oats
1 tbsp cacao powder
1/4 tsp salt
1/4 cup pumpkin seeds
2 1/2 tbsp coconut oil
1/4 cup maple syrup
INSTRUCTIONS
Preheat oven to 300 F and line a baking tray with parchment paper.
Mix oats, cacao powder, salt and pumpkin seeds in a bowl.
Stir in coconut oil and maple syrup and toss until coated.
Spread mix on tray and bake for 15 minutes.
Give it a mix, flatten again and bake for another 15 minutes.
OVULATION & LUTEAL PHASE VERSION
INGREDIENTS
2 cups gluten free oats
1 tbsp cinnamon
1/4 tsp salt
1/4 cup sunflower seeds
2 1/2 tbsp coconut oil
1/4 cup maple syrup
INSTRUCTIONS
Preheat oven to 300 F and line a baking tray with parchment paper.
Mix oats, cinnamon, salt and sunflower seeds in a bowl.
Stir in coconut oil and maple syrup and toss until coated.
Spread mix on tray and bake for 15 minutes.
Give it a mix, flatten again and bake for another 15 minutes.
NOTES: Wait until granola cools completely to get crunchy.
